## FILIPINO-STYLE BEEF STEW
- 1 1/2 lb. boneless beef stew meat
- 2 small onions, chopped
- 2 medium tomatoes, chopped
- 1/2 cup soy sauce
- 1/2 to 1 cup water
- 1 tablespoon Chili Sauce
- 1 bay leaf
- 1/2 green bell pepper, chopped
- 1/2 red bell pepper, chopped
- 2 medium carrots, sliced
- 2 medium potatoes, cubed
- salt and pepper to taste
1. PLACE beef, onions, tomatoes, soy sauce, water, chili sauce and bay leaf in a large saucepan.
2. Bring to a boil over medium-high heat; reduce your to medium-low. Cover; cook for 40 minutes.
3. Add bell peppers, carrots and potatoes; cover.
4. Cook for an additional 15 to 20 minutes or until sauce has thickened and beef is fork tender.
5. Season with salt and pepper to taste.
6. Serve with hot cooked rice.
