MOMS PANCIT
- Ingredients
- 1 pkg cellophane noodles (sotanghon)
- onion
- garlic
- 1 pkg carrots (get the ready made julienne cuts)
- 1lbg snow peas
- 1 stalk of green onion.
- 1 chicken breast cut in cubes (rotisserie breast)
- soy sauce, pepper, to taste.
- Optional broccoli, cabbage
- soak noodles in cold water for half an hour and cut in to 1 inches. drain and set aside.
- brown cube chicken and remove from pan. For shortcut you can use the chicken rotisserie beast.
- saute garlic, onions and stir the carrots and snow peas do not overcook and remove from the pan. Separate a cup of cooked vegetables to garnish the pancit for presentation.
- Boil the chicken stock. In a low heat add the noodles. Keep on stirring until the noodles is cooked and drain. (to avoid sticking in the wok)
- Once the noodles is cook. Turn off the stove.
- Drain the noodles, stir the veggies and season with soy sauce and a little bit lemon to taste. add chopped spring onions.
- Note: Cellophane noodles is easier to cook than the regular noodles. This don't get soggy. You can also use the Korean noodles.
- You can add hard boiled eggs to garnish the cook noodles with the vegeables and spring the spring onion
